AIP Pot Roast

This recipe came to mind after I discovered my body does not tolerate white potatoes. although they were not considered Paleo at the time, anyway. I also do not tolerate sweet potatoes as they make me nauseous. On my quest to find a suitable replacement, I stumbled upon radishes as the substitution for potatoes. The result? A delicious pot roast with the comforts I recall.

Cook Time 8 hours
Total Time 8 hours 30 minutes
Servings 4 servings

Ingredients

  • 2 lb pot roast
  • 4 lg slices carrots (whole and unpeeled)
  • 4 stalks sliced celery
  • 1 whole chopped onion
  • 1 bundle radishes (cut in half)

Instructions

  1. Place all ingredients in a 6 qt slow cooker add sea salt and pepper (omit for AIP) to taste. Cover with water and cook on low for 8 hours. Top with ghee (if tolerated) or coconut oil.

Recipe Notes

I like to add some of the broth to mine and eat like a soup.
