Egg Muffin Frittatas

These are perfect for breakfast, or any meal on the go. You can freeze these once they are done and pop them in the micro in the morning. If you do not micro, then thaw and heat in a toaster oven.
Prep Time 10 minutes
Cook Time 30 minutes
Total Time 40 minutes
Servings 6 muffins

Ingredients

  • 6 ea eggs
  • 2 TBSP coconut flour
  • .5 c full fat coconut milk
  • .5 c bacon
  • .5 c spinach (I use frozen)

Instructions

  1. In a measuring cup, add eggs, coconut flour and milk.
  2. Blend with a single hand mixer until smooth.
  3. Pour into a muffin pan lined with cupcake liners.
  4. Drop in bacon and spinach.
  5. Bake for 30 minutes at 325.
