Olive Burger on Paleo Mug Bread (AIP option)
This is definitely an occasional "treat." Sometimes, I crave a good old-fashioned burger. Although there are many Paleo mug breads out there, I needed on that was not only Paleo, but also AIP. I found a recipe (below) and adapted it to fit my needs. I was able to use the egg since I have successfully reintroduced those, but I have included instruction for using gelatin egg in place of a chicken egg.

Ingredients
Mug Bread
- 1 lg egg -or-
- 1 lg gelatin egg (replace egg for AIP)
- 3 tbsp coconut flour
- 1 tbsp olive oil (or coconut oil)
- .33 cup water (or coconut milk)
- 1 dash sea salt
- .25 tsp acv
- .25 tsp baking soda
For the Burger...
- 4 oz ground beef
- 2 tbsp green olives (black works, too!)
- .25 tsp sea salt
- 1 tsp garlic (or to taste)
Instructions
Mug Bread

Place egg in a mug and whisk until fully blended. If using a gelatin egg, see instructions below.

Add olive or coconut oil with sea salt and blend with egg.

Add coconut flour and blend, adding water as you stir. stir until all the lumps are out and mixture is smooth. It will look much like corn bread at this point.

Add in ACV and baking soda (this acts as baking powder for the rise) and mix well. You will notice tiny bubbles appearing.

Place in microwave on high for 3 minutes, or until done.
For the Burger

Place ground beef in a bowl and add in olives, garlic and salt.

Mix ingredients together well using hands.

Form ground beef into a patty using your hands or a patty maker.

Cook over medium heat on both sides until done. Usually takes 5 minutes per side to complete.

Remove bun from mug and slice in half. Place burger on bun and add garnishes, and/or Paleo mayo and enjoy!
