4-Egg Scramble
One thing you will notice about my recipes is they are fast, tasty and usually go into a bowl.
Quick, low carb Paleo breakfast.

Ingredients
- 4 ea eggs
- 1/4 c spinach I use frozen
- 1/2 ea avocado
- 1/2 c mushrooms I use fresh
- 2 tbsp ghee or coconut oil
Instructions

Place ghee/coconut oil into skillet and turn turn on to medium heat.

Once the ghee/coconut oil begins to melt, add the spinach and eggs.

When the eggs are nearly done, add the avocado, scrambling as the eggs cook.

When the eggs are done, place them in a bowl or plate and add sea salt and perhaps a bit of raw organic honey for some sweetness, although this will add to the total carbs in your dish. I vary mine since the raw honey is so good for me!
